Hamilton Horne is growing some exciting stuff for Chefs, in a shipping container near downtown Charleston no less. Hamilton reached out to me recently to get me to come by and see what he does. Since then I have featured his Veggies on almost all of my menus.
What I love is that I can literally go there with my menu in mind and he will harvest plants that perfectly pair with my menu. In some cases the dish may contain a pop of something for garnish, in other cases I might feature 100 percent of his mixed offerings in a dish.
Hamilton is a great guy, grew up here in Charleston, and passionate about what he does.
