Manchester Farms
This farm is awesome. I had no idea that I had been using them all throughout my NYC Chef days. They actually sold quail to a larger company there who sold it under its own label. I never knew that it was Manchester’s quail.
When I first contacted Angela, I said “Why have I not heard of you?” She laughed and said “you have, you just didn’t know it”.
I love quail and use it as often as my clients let me. The Semi-boneless is my go to and it marinates so nicely. Being the farm is just up the road in Columbia SC, I can get it super fast and fresh any time. Angela is an industry vet and super fun to work with.
