What can I say about Tank Jackson that you don’t already know? The most colorful and vibrant man in the Pig Farming Business. Tank travels all over the country working hard to bring the very best swine to the very best Chefs everywhere. We are fortunate to have him here in Charleston in our own backyard. He raises his pigs to have the very best flavor and has been breeding specifically to do so for many years. His pigs are second too none and highly sought after by the countries top Chefs.
You will know it when you meet Tank, he leaves an impression. He is deeply knowledgable about all things pork, a great cook and has incredible relationships with other local farms and Chefs. Follow him on Social Media for his incredible pop ups around town with his friend ( and hell of a cook too) Commandant Jones. They often feature guests Chefs he collects as friends along the way.
Bottom line is that when I have the chance to cook his pork I do. And it is always incredible.
I once had the honor of having Tank cook one of his pigs for my Birthday for a group of friends. “It may be the single best food experience of my life”.
